It sounds like the classic watery boing of a spring reverb (or at least the spring reverbs that give much of that sound). But there isn't anything much of the rest of a spring reverb sound. It could be a modified spring reverb or something else being hit or wobbled.

I think it's having an effect on the reverb - either changing the eq on the reverb or the reverb length, but it's difficult to tell because he tweaks the desk just after he turns the knob.

As you've probably seen there's a lot of choices out there. It also depends on what your budget is. For convolution Altiverb seems the best to me, but there are good cheaper convolution alternatives.
