Same sampler you use for dub or hip-hop ;)
so i think Mpc2000 can be good things... but you must have other module for have complete starting studio..

on first sight the mpc4000 seems to have all you need to record your dancehall riddims: sound generation (sampler), sequencer, effects. here's a link to the official akai product page.
the mpc has a good reputation in the hiphop world for creating beats. i have some doubts however if the sequencer interface with it's small screen is really suitable for creating more advanced arrangements. at least for playing keyboard and organ parts i guess you would have to connect an additional midikeyboard.
also when it comes to recording vocals on top of the riddim i assume you will feel the limitations of a "beatz" machine like the mpc.

if you have a reasonably fast pc you could try out a all-in-one studio software like reason. they also have a free demo version to dowload..

I believe quite a lot of dancehall has been made on mc2000's.
They have a good sequencer.
I use a mpc 2000 to do hip hop and reggae.
The only drawback is with them being old technology they use floppy disk drives which can only save 1.20 mb at a time, although you can use multiple disks.

But the mpc 2000xl can be fitted with a cf card reader pretty cheaply - 20 or $30 if you install it yourself.
Where as the 2000 can not be fitted with one cheaply.

The newer models are easier to integrate into into a modern PC setup as they have USB, the older ones use Midi.
Mpc 2000's are great machines, but they are pretty old school and if you're more used to modern equipment they might not be your cup of tea.
Hope that helps dude.
Peace.
